Every have a really good food day? It might be a small victory, but a worthy one, no doubt. In the mommy-land of boxed foods, goldfish and cheese sticks, it seems miraculous to get a fully home-cooked meal on the table, let alone 3. It's too easy to "make" cereal in the morning and offer PB&J for lunch. The dinner time rush can be just as nuts as you're trying to get something hot and well-rounded on the table. (I know I'm not the only one with this struggle.)
But every once in awhile, the stars align and I fall into the groove. I have a plan. I have the needs. I have the time. And I have fun. I have to admit, I also have a man who dotingly care-takes the kids so he too can reap the benefits of my home cooking.
With little more than my pantry staples, I pulled together a days worth of meals without cutting corners or compromising on taste. There may be a little extra fat in the dinner, but at least it tastes AWESOME.
My day of effortless meals:
Breakfast.... Bacon/Egg scramble with veggies in a tortilla
Lunch.... Egg Salad sandwiches
Dinner.... Scratch Mac & Cheese with asparagus and salad
My kids ate - seconds. All day. I'm serious. There was no complaining and no whiny hunger. Those old-time mothers were on to something with all that time they spent in the kitchen.
